Since 2014, Yannick Alléno is in charge of the kitchen of Pavillion Ledoyen, which includes 3-star restaurant Alléno Paris with 45 seats in the centre of Paris, at the Champs-Elysées. He manages this historic building measuring of more than 2,200 m2, showing his creative energy in every corner. L’Alléno Paris, situated on the 1st floor of the Ledoyen-pavillion, in a magnificent and yet intimate room, of which the decorative woodwork is protected as a historic monument, every detail is carefully arranged for an exceptionally gastronomic appearance. Fabrics, devised by Kostia and produced by the Montex-ateliers are there to upgrade and thus contribute to social discretion. In the modern kitchen he uses, he adds the excellence of his learning years to the greatest chefs and all avant-garde of his approach. The Extractions bring the sauces up-to-date, the fermentations instil the terroirs and the services follow each other in lightness. Every dish is constructed, structured, professionally researched… Miraculously surprising, both in flavour, in finish and persistence in the mouth, as in the proposal, every dish is characterised by its recognisable creativity.

What is your favorite functionality regarding Annoncer and why?

Clear information between service and kitchen. In addition, we avoid mistakes with allergies because we can assign the allergy to the guest at once, across the entire service. In addition, I find the speed fantastic, when the service has to take up a table it is shared very quickly. The table order in Annoncer incl. time counter is an important one for smooth service.

 

What has Annoncer done for you?

We avoid mistakes by providing clear information to our kitchen team. In any case, we won’t open a restaurant without Annoncer.

 

What would you like to tell someone who is thinking about purchasing Annoncer for his/her restaurant?

Get the right people on your team to implement and carry Annoncer. It takes some time for the team to manage the system, but after a short period of time you can’t live without it.
