Born in 1968 in Puteaux, France, Alléno’s culinary journey began in his family’s bistros and continued through his education at Lycée Santos Dumont. Alléno’s breakthrough came at Scribe Hotel in Paris, leading to his role at Le Meurice, where he earned three Michelin stars in 2007. His pioneering philosophy, emphasising “terroir” and seasonal, local ingredients, led to “Extraction®,” a technique that intensifies flavours and redefines modern French cooking.

He now oversees several Michelin-starred restaurants, amassing 16 Michelin stars across 17 restaurants throughout his career. These include Pavillon Ledoyen in Paris, which holds three stars, and L’Abysse, a Michelin-recognized sushi counter. His international ventures, such as STAY by Yannick Alléno in Dubai and Seoul, showcase his global culinary influence.

A significant part of his culinary empire is the Pavyllon concept, which merges fine dining with a more relaxed, accessible atmosphere. This concept is designed to provide a sophisticated culinary experience while maintaining a welcoming and informal setting. Pavyllon emphasizes counter seating, allowing guests to interact with chefs and gain insights into the intricate preparation of their meals.

Clear information between service and kitchen. In addition, we avoid mistakes with allergies because we can assign the allergy to the guest at once, across the entire service. In addition, I find the speed fantastic, when the service has to take up a table it is shared very quickly. The table order in Annoncer incl. time counter is an important one for smooth service.

 

What has Annoncer done for you?

We avoid mistakes by providing clear information to our kitchen team. In any case, we won’t open a restaurant without Annoncer.
